Yeast dough:

  • 50 g of yeast
  • 80 g of sugar
  • 200 ml milk
  • 10 egg yolks
  • Salt, lemon, vanilla
  • 600 g of flour
  • 80 g melted butter

Preparation of Buchteln:

Mix the lukewarm milk with the yeast and sugar and cover it for approx. 20 minutes. Let it rise at room temperature (= called "steam"). 

Mix all the remaining ingredients with the steam and spices and beat the dough until it bubbles. Then again approx. 20 min. let go at room temperature. Form round dumplings of approx. 50-60 g from the dough and place in a suitable baking pan. Let the dough rest for another approx. 30 min., then bake it at 180 ° C for about 30 min. After cooling, sprinkle with sugar and serve with strawberry jam and vanilla foam sauce.
