Ingredients for 1 strudel:


300 g wheat flour 00
200 g butter
100 g of sugar
1 egg
1 pinch of grated lemon peel
1 pinch of salt


approx. 800 g freshly peeled and sliced South Tyrolean apples
50 g bread crumbs
50 g of sugar
40 g sultanas
30 g pine nuts
1/2 tsp cinnamon
1 pinch of clove powder
Other: 1 egg yolk


First you mix all the ingredients for the filling. For the dough, the flour is sifted on a baking board. The butter is cut into cubes and kneaded with the egg, the sugar, the grated lemon peel and the salt as well as the flour to a smooth dough. Let it rest in a cool place for half an hour. Then it is expelled 5 mm thick, rectangular and the filling is distributed lengthways in the middle. The folded strudel is carefully lifted onto the baking sheet and smeared with whisked egg yolk before baking it in the preheated oven at approx. 220 ° C for about 50 minutes.
The South Tyrolean apple strudel can be made from puff pastry, pastry or short pastry.
